Very red

What does red symbolise? Love? Anger? Happiness? Blood? Devil?


Why red velvet? I have no idea.
I mean, if you can have red.. you can have any other colour you want really! :D


This time, red. Next time.. who knows. Perhaps I'll try a rainbow cake. Haha..

Red velvet cupcakes with cream cheese frosting
Makes 12 cupcakes

60g butter
150g sugar
1 egg
10g cocoa
2 tsp red food colouring
1 tsp vanilla extract
120ml milk
150g self raising flour

some cream cheese frosting

Preheat oven to 170C.

Mix cocoa, red dye and vanilla extract together to form a paste.

Beat butter and sugar until light and fluffy.
Add in egg and beat gently.

Combine with the red cocoa paste, milk and flour.

Mix with an electric mixer on low until combined.
Increase speed to medium for a minute.

Line cupcake tray with 12 cupcake cups. Fill to 75% full.

Bake for about 15 mins or until cooked. Check with skewer.

Allow to cool before applying cream cheese frosting.

Very moist. And very red. ;) Hope you enjoyed them, after you destroyed them in transition. :(

I've just spent the past half an hour looking for a red velvet cupcake recipe that contains no cake flour, buttermilk or baking soda (long story!) and this just ticks all the boxes. I definately can't wait to try it out - I hope it tastes good! Thank you very much :)
